How do I find keywords my competitors rank for but I don't?

A keyword gap is a search term your competitors rank for that your site doesn't. To find them, pick 3 to 5 competitors that actually appear in your search results, collect the keywords each one ranks for, and remove the ones you already rank for. What's left is your gap list.

What counts as a competitor for a gap analysis?

Anyone ranking for the same terms you want. They don't have to be direct competitors in the business sense — if a company appears in search results for the terms you're targeting, they're taking your click. Pick 3 to 5, not 30. More than that and the gap list stops being actionable.

What do I do with the gap list?

Publish a page for each gap. Use the keyword as the page heading, answer it directly in the first few sentences, and include one concrete fact a competitor's page wouldn't have. That's what makes a page citable.
